Tuna swim in rough seas, and fishermen catch them. As a tuna middleman, I am deeply aware of this, which makes the common act of eating tuna a truly remarkable experience. At auctions, where I do most of my work, both the tuna and its tail are present.
I assess the quality by feeling the meat from the tuna’s tail. By picking it up and kneading the meat, I can judge its true strength. Even among 25 tunas, it’s hard to find even one that meets my standards. This is how I discern the best tuna.
The key is to identify those with good meat quality, particularly red meat. If the red meat is of high quality, it inevitably comes with good fat.
